200g Evergreen’s Lamian Noodles
1/3 cup olive oil
1/3-1/2 cup chopped Calabrian chilis
1 tbsp chili flakes
1 tsp salt
1 tsp onion powder
2 tbsp chilli oil; divided
3 garlic cloves sliced
2 tbsp sundried tomatoes sliced
2 tbsp tomato paste
1/2-1 cup noodle water
1/2 cup cream
1 tbsp chopped fresh parsley
Pepper to taste
Step 1
Chop Calabrian chilis finely. In a bowl, add chili flakes, salt and onion powder/minced, and the chopped chilis. At the same time, cook the noodles.
Step 2
Heat up olive oil. It should be just warm enough to make the chili flakes sizzle. Pour it over the spices and mix. Transfer it to an airtight container once cooled.
Step 3
Heat oil in the pan. Once it’s hot, add chili and oil mixture, dry tomato slices, tomato paste, garlic pieces. Toss till they are well-combined, then add parsley and creamy.
Step 4
Add the noodles to the pan, stir till they are well-coated with sauce.
Step 5
Transfer the noodles to a plate, then top with chopped fresh parsley. Enjoy!
