200g Evergreen's Hard Tofu
1/3 cup yeast
1/2 tsp dried thyme and red pepper flakes
Salt and pepper to taste
1-2 tbsp oil for pan-frying
1 bunch of rosemary
Step 1
Cut the tofu in to “fry” shapes, about 1 cm in width and 8 cm in height. Spread them out evenly on a paper towel in a rimmed baking sheet, top with another paper towel and then top with something heavy, either another baking sheet or books. Press for only 5-7 minutes.
Step 2
While the tofu is pressing, combine the yeast, spices, salt and pepper in a shallow dish.
Step 3
Coat each piece of tofu generously in the yeast mixture. Pat with your hands to ensure it sticks.
Step 4
Set a skillet on medium heat and let it come to temperature. Add in the oil and pan sear the tofu in batches, cooking about 3-4 minutes on each side or until the tofu is brown and crispy.
Step 5
Serve with your favourite dipping sauces. Enjoy!
