300g Evergreen's Tofu Pudding
50g taro, peeled and diced
50g tapioca pearls
1/2-inch piece of ginger, thinly sliced
25g brown sugar
250ml water
Step 1
In a small pot, bring 250ml of water to a boil. Add the ginger slices and brown sugar. Stir until the sugar dissolves, then reduce the heat and simmer for 10 minutes to infuse the ginger flavour into the syrup.
Step 2
Cook the pearls in boiling water according to the package instructions until soft and chewy. Drain and rinse under cold water.
Step 3
Steam the diced taro for about 20 minutes or until tender. Alternatively, boil the taro until soft.
Step 4
Place 300g of Evergreen's tofu pudding into a serving bowl.
Step 5
Add the cooked taro and pearls on top of the tofu pudding.
Step 6
Pour the ginger and brown sugar syrup over the tofu pudding, taro, and pearls.
Step 7
