200g Evergreen’s Hard Tofu
1 egg
2 tomatoes
2 pieces of ginger
3 cloves of garlic
Spring onions to taste
Tomato sauce (optional)
FOR THE SAUCE
1 tbsp soy sauce
1 tbsp oyster oil
1 tbsp cornstarch
½ tbsp salt
½ tbsp pepper
1 cup of water
Step 1
Slice the tofu into even portions and delicately coat each slice with egg wash. Cut the tomatoes, spring onions, garlic, and ginger into small pieces.
Step 2
Heat some oil in the pan. Once the oil is hot, gently place the egg-coated tofu slices in the pan, frying them till they become golden brown on both sides. Then, transfer these tofu slices onto a plate for future use.
Step 3
Heat some oil in the pan and wait till it’s hot. Add garlic and ginger to the pan, and stir fry till they are aromatic.
Step 4
Add tomatoes and stir fry till they are soft. Then, add the sauce mixture to combine with the tomatoes. Drizzle some tomato sauce to elevate the taste (optional).
Step 5
Add tofu slices to the pan, and gently stir fry till each tofu slice is perfectly coated with tomato sauce mixture.
Step 6
Place the tofu onto a plate and sprinkle some spring onions on top. Enjoy!
