200g Evergreen’s Hard Tofu
⅓ cup soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
3 tablespoons sesame oil
3 cloves garlic
¼ cup chopped green onions
¼ cup dry chilli
¼ cup water
Handful fresh basil leaves , leaves removed from the stems
Salt and pepper to taste
Step 1
Carefully break apart the tofu into large chunks and evenly coat them with cornstarch.
Step 2
Heat some cooking oil in the pan.Once the oil is hot, then shallow fry the tofu till both sides are golden and crispy. Transfer the tofu into a plate for future usage.
Step 3
Heat the same pan over medium high heat. Add in the sesame oil. Once hot, stir-fry the garlic, and chopped spring onions. Add the soy sauce, cooking wine, brown sugar, and water. Leave to come to a boil, around 2-3 minutes. Add the dried chiles.
Step 4
Add the fried tofu and then coat in the sauce. The sauce will continue to thicken to coat the tofu. Add in the basil leaves. Toss to cook the basil. Turn off the heat once the basil leaves are well cooked.
