Ingredients

200 g Evergreen's Firm Tofu

200g Evergreen's Yangchun Noodles

Spring onions and chopped peanuts to taste

FOR THE SAUCE

1 tbsp pickle cabbage

1 tbsp oyster oil

1 tbsp chilli oil

1 tbsp dark soy sauce

1 tbsp soy sauce

3 minced garlic cloves

1/2 Sichuan pepper

1/2 white pepper

Method

Step 1

Take a plate and arrange four blocks of firm tofu on it. Using a wooden spoon to gently press down on each block and mash them until they are flattened and have a crumbly texture. At the same time, boiling the noodles.

Step 2

Head some oil in the pan, add the mashed tofu and gently scramble it for 1 min.

Step 3

Add the sauce to the pan and stir until the tofu and sauce are well-combined.

Step 4

Add the cooked tofu on the top of the boiled noodles and drizzle some sauce on it.

Step 5

Sprinkle some spring onions and chopped peanuts on top. Enjoy!
